Menu Plan Monday

These last few months I have been traveling, making costumes for a school play, and baseball season started. Last week I could not even tell you what day it was! We are almost in the last month of school and field days and school trips are coming up. This year my daughter will get a day off of school to go to work, but since my husband and I both work jobs that don't permit children, my best friend will be taking her to her science lab. I can't wait to hear all about her day. I always day dream about what my kids will be like when they grow up. They surprise me everyday with how they handle different things and how they think.

Now I need to get back to meal planning:

Sunday
Breakfast- breakfast casserole
Lunch- pizza
Dinner- oven baked pork chops and parm veggies
Monday- Zucchini pasta with homemade tomato sauce
Tuesday- steak tacos
Wednesday- Red beans and rice
Thursday- Greek chicken salad
Friday- Velveeta shells and cheese
Saturday

Breakfast- breakfast omelet rolls
Lunch- leftovers
Dinner- chicken with white barbecue sauce and spicy oven fries

*Breakfast during the week is cereal or eat at daycare for the kids. I have a cup of almonds as a morning snack and maybe a cup of tea when I get to work. Lunches during the week are cold lunch and leftovers, and the kids get to have hot lunch once a week. I try not to get fast food since I only have a 30 min lunch, but sometimes my cravings force me to do it.

  1. I had never heard of Zucchini Pasta before-- but after I clicked the recipe, I then pinned it to try later this summer when I have a bunch of zucchini to use up! :) Thank you for sharing!

    1. I haven't been eating Zucchini long but by cutting down on pasta and wheat I have been maintaining a good weight. I hope to have a garden this summer or at least pilfer from my sister's garden.
